All time favourite snack for us. Amma used to make this multiple times. And my brother loved it so much. As and when its made, it will be finished. It was tasty to eat it as soon as its cooked. Or keep it for a day and fry it in a tawa. Both were equally tasty.
Koduve Polo is a very common dish we grew up eating. It used to be difficult to source, so whenever we got it, it felt like a small celebration.
The spinach itself has a slightly distinct taste, but when it is made into a dosa like this, it turns absolutely heavenly.
This is how it looks like. Its a bit difficult to clean it and make it ready for cooking.Moringa has always been a part of our diet growing up. In many households, there would be a moringa plant, so we regularly ate the sticks, leaves, and even the flowers.
The sticks are commonly used in sambar, and we also make delicious curries with coconut or combine them with potatoes in different ways.
The leaves are used to prepare upkeri or added to dosa batter.
Out of all these, moringa dosa has always been my favourite. This photo from Lishakki brought back all those old memories.
